2016 Sparkling Clairette Pet Nat
One of our "other" Pet Nat wines and pretty sure this is the only (domestic) sparkling Clairette!
Pet Nat, short for pétillant naturel, can be made from any grape variety (this one is Clairette) and is a simpler and ancient way to make sparkling wine. In its purest form (as ours is) the ingredients are limited to grapes. After spontaneous fermentation begins, but before it is complete, the wine is bottled where fermentation continues creating delicious bubbles.
Sophisticated nose of a salty ocean breeze, honeydew and a freshness like green apple. The flavors are more savory than expected, a playful combination of almond oil, hazelnut, Asian pear are scattered around your palate with those tiny perfect Pet Nat bubbles. Overall, this is a fun but intellectual wine that can be pondered with the perfect seafood pairing, or enjoyed straight out of the bottle with no cares in the world but what you’re going to do with the rest of the afternoon.
