Making wine is the most humbling and magical of endeavors. Our signature white blend, Eliza is the voice of Barsotti, speaking for: Clairette, Picpoul, Vermentino, Roussanne & Grenache Blanc. This wine’s allure lies in its ability to show off each varietal’s character and complexity. Pairs elegantly with foraged mushrooms and squash.

On the nose, you’ll sense the bright aromas of lemon zest, a touch of creamy sweetness and a perfume of pear blossom. As soon as you take a sip, your palette begins a beautiful journey from the tip of your tongue where the acidity tingles your mouth awake to the weight of the creamy, round, and soft texture which shows just a bit of oak influence that is balanced with acidity. Finally the flavor is captured on the roof of your mouth with flavors that linger on as a fond memory, well after they finish. The wine’s zippy salinity pairs elegantly with a spicy sashimi, or a dish of lemon buttered scallops and charred broccolini.
