2020 Sparkling Clairette Pet Nat
After 3 years, this delicious sparkler is back!
Each year we rotate the vineyards and varietals for our “other Pet Nats” in order to not become a sparkling house (although that’s not a terrible idea!). We limit ourselves to 4 Sparkling Wines each vintage where Lily’s and Brut Nat are constant. In 2020 one of the spots is filled by our Barsotti Vineyard Clairette Block with a healthy dose of Barsotti Picpoul. The Picpoul brings the acid, which is vital for any sparkling wine.
Tasting Note: It’s always a little extra work to figure out the aromatics of a Pet Nat wine. Something about the fresh bubbles popping inside the glass, the yeast as it settles and exposes itself to oxygen…but here, the wine quickly adapts what aromas your mind initially recognizes. Our minds settle on bright lemon upfront and an almond nuttiness in the background. The movement between the flavors on your tongue is equally transformative with a touch of sweet, sour, and savory constantly evolving as you move through the glass of tiny fizzy bubbles. The wine shows a playful combination of almond oil, hazelnut, Asian pear and sweet lemon glaze.
