2019 Stems + Skins, Vermentino

The inclusion of stems and/or skins can dramatically impact every aspect of a wine. The decisions of when to include, how much, and for how long, are pivotal considerations that determine the final character of a wine. Vermentino is one of our favorite varietals for a touch of skin contact. The aromatics are intoxicating and the resulting textural profile dramatically expand the food pairing options. We expect to see a version of this wine become a staple in our release plan as a result!

Tasting Note: Our skin-ferment Vermentino captures the fragrance of honey suckle, Meyer lemon blossoms and fresh peaches. This wine then has you salivating within a split second of it hitting your tongue. With zippy acidity, a savory salinity, and well-rounded stone fruit characteristics, we have fallen in love with this wine all over again. Be sure to have a bottle on-hand for your next cheese + charcuterie + movie night. We recommend a hard alpine cheese, prosciutto, and Castelvetrano olives.
