2013 Lilys Cuvee Sparkling Chardonnay

2013 Lilys Cuvee Sparkling Chardonnay

Our 3rd year making bubbles, our Petillant Naturel (Pet Nat) is made from (mostly) Chardonnay grapes. We do not add sugar, yeast or anything else. We whole cluster press our hand harvested grapes to tank. Fermentation begins spontaneously and continues until near dry when we bottle under crown cap. Months later we disgorge to remove the heavy yeast sediment and reduce the pressure. The result is a delightful, too easy to drink, sparkling Chardonnay with a touch of sweetness. Spring in a bottle!

13-KRAISEY: Sparkling Merlot

13-KRAISEY: Sparkling Merlot

After 3yrs making sparkling Chardonnay Jared could not resist a sparkling red and thought our Anderson Valley Merlot might be the perfect grape. We whole cluster pressed to tank where fermentation began spontaneously and continued until near dry when we bottled under crown cap. Months later we disgorged to remove the heavy yeast sediment and reduce the pressure. This is definitely unusual (or as they say in the Anderson Valley - Kraisey which loosely means a mix up) but for the more adventurous will surely surprise and delight. With only 11.2 cases made this is only available to our wine club but next year we will surely make more!
